According to various published research, germination significantly affects the nutritional properties as well as the antioxidant content of the seeds. Therefore, germinated seed-derived products are an increasingly popular product line due to their health-promoting biological properties. However, in Vietnam, germinated seeds have not received much attention apart from soybean sprouts and rice sprouts. Thus, the research team employed the new object, the germinated peanut kernels, in developing a nutritious powder.
